From the Roaster
These beans have a caramel-nutty sweetness with a hint of passion fruit. The more body the beans have, the more the sweetness stands out, so we roast them medium roasted.

Farm Information
The farm was started in 1962 when Ben Colbran, who immigrated from Australia, bought the land of the Bairoda Farm, which is now part of the Colbran Estate, and started growing coffee seedlings. Today, Ben's granddaughter, Nicole, has taken over the coffee production and produces the highest quality Arabica coffee.
The farm covers an area of 230 hectares and in addition to the original Typica plantings, new plantings have been made of Bourbon, Arusha and, more recently, Mondo Novo.
This lot is only from the "Morita" section of the Collbran estate, which has a cultivation area of 24 hectares.
Fermentation takes a long time because the altitude is over 1,800m and the outside temperature is very low.
The fermentation time is about 40 hours. This slow fermentation makes the taste of this Collbran Farm even more delicious and juicy. Previous PNG products have also been fermented for a long time, but this time it is even longer. Of course, a long fermentation time is not necessarily better, but when the temperature drops, the activity of lactic acid bacteria becomes more active,
