Made in JAPAN DECAF Project 5: Indonesian Klinci Mountain Mandheling Natural Beans without Pesticides
Made in JAPAN DECAF Project5: INDONESIA KERINCI
When you look at the photo, Kurinchi Mountain looks like Mt. Fuji seen from the tea fields of Shizuoka. You can feel the fresh air and water from this photo.
The Klinci Mountains are over 3000m above sea level, and the cultivation areas are relatively higher than those in Linton, with most of the coffee grown at around 1600m. There have long been many coffee producers around the Klinci Mountains. However, most of the coffee was mixed into the standard G1 class and was never sold as coffee from this region. In recent years, many producer associations have been formed, and the representatives of these producer groups are all young and very motivated. Suruyono, the representative of the ALKO producer association, is one of them. He has the ambition to bring together 460 farming households and produce coffee that will put them in the spotlight.
Suryono places particular emphasis on the drying process while carrying out thorough quality control. While the "Sumatran method" is common in Sumatra, he uses the natural method, which is extremely rare. The natural method is broadly divided into three stages, and the first drying process (a period of time that reduces the weight of the cherries by half) is carried out slowly to create a fruity and rich fermented flavor. These coffee beans from the region have been gaining attention in recent years for their distinctive high quality, born from "carefulness."
