Swiss Water Processing Honduras Coca-Cola Decaffeinated (Since it is not JAS certified, it is not possible to write "organic" in the description.)
[Nyuri's comment] This is a Canadian decaf processed with Swiss Water. The flavor is weaker than that of domestically processed coffee, but there is nothing negative about it and it is easy to use. It is roasted medium-dark, so it is recommended for espresso and lattes. It has a clean cup with a slight acidity and sweetness of stone fruit. Domestically processed decaf coffee is expensive, so we chose Swiss Water processed coffee, which is cheaper and has fewer negative flavors. We recommend using them in different ways. This product was manufactured in October 2022, so it is currently fresh, but we will let you know if it shows signs of deterioration.
[Production information] The Republic of Honduras is a republic located in the center of Central America, with a rich natural environment. It borders Guatemala to the west, El Salvador to the southwest, and Nicaragua to the southeast. To the south is a mountainous region that runs from northwest to southeast along the Pacific Ocean, and to the north on the Caribbean Sea side is a plain. The mountainous areas, which make up about 80% of the country, have rainy and dry seasons, and the plateau areas at altitudes of 1,000 to 1,500 meters in the main part of the country have a climate of perpetual spring.
[Coffee cultivation and the environment] Coffee production plays an important role in the economy and history of Honduras. The country is one of the world's leading coffee producers and in 2011 was the largest coffee producer in Central America.
[Kokafcal] The producers' coffee is grown in the village of Las Capucas, located in the forests of Serraque National Park, about 158 km west of the Honduran capital, Deguscalpa. The company has obtained certifications such as Rain Forest, FLO, and Canadian Organic, and practices sustainable coffee cultivation with consideration for the environment.
[Together with coffee producers] The Cocajucal Producers Association uses Fairtrade social development funds to build and operate a community health center, provide sports programs for children, build a community soccer field, create organic compost, set up nurseries for coffee, fruit and other shade trees, and undertake beekeeping projects.
